HI EVERYONE!

Hope you are all enjoying this beautiful Spring weather! We’re certainly looking forward to more and more availability for fresh, scrumptious eats and treats and healthy all-natural products free of the chemicals and “unknowns” of the commercial world. So here’s what’s going on this week.

From LEILANI’S, dress up your salads with colorful and tasty Swiss Chard (also great added to pasta after sautéing with olive oil and garlic). Several new varieties of fresh-picked Head Lettuces are now available, along with dusky ‘Red Russian’ and green-leaf ‘Siberian’ Kale and extra-tender baby Georgia Collards (don’t forget the FIVE HENS Fatback for true southern taste). In the Vegetable section.

YIKES om the Shrimp faux pau. Ordering has been enabled and you can get all the Georgia White Shrimp your heart and taste buds desire! This week it’s wild-caught and quick-frozen for superb taste. In the Meat section of The Market.

It’s definitely the season to buy your plants – vegetables, perennials, hanging baskets, houseplants! – from local farmers and nurserymen. Every week Dogwood Valley Greenhouse has some new perennial plants and herb plants listed. Planting time is upon us, so spruce up your garden this week! We also have a selection of herb plants available at Square Books. If you’d like to see something special before purchase, please drop us a note. ALFN Local Food Club:  The Market Is Open


ALFN Members,

Welcome to another week of local veggies, meats, cheeses and artisan products. From goat soap to asparagus, the market contains a diverse listing of weekly needs for a single person or a whole family.

This next Saturday, April 30th, is another Community Market Day. This week, Mac Family Farm will be with us. Brandy McAllister will be present to display many of the products she cultivates and makes on her homestead. Make sure you drop by to see her line of goodies and meet Brandy!

Bio-Accumulation

Since the population crash of predatory birds was linked to the pesticide DDT back in the 1960’s, scientists have observed the phenomenon of pesticides accumulating in concentration as it moves up the food chain. Pesticides can become concentrated in fat cells of certain species and predators of those species can then get a concentrated dose by eating the species lower on the food chain. For example, a field is sprayed with DDT to take out mosquitoes. The pesticide falls on everything including seeds and other plants that are consumed by a mouse. Predatory birds eat mice and the DDT quickly concentrates in the fat stores of the bird as it passes from mouse fat into energy for the bird. Why am I discussing fat, mice and pesticides on a beautiful Sunday morning?

A recent study found the presence of glyphosate (think Roundup—an herbicide and known human carcinogen) in coffee creamers, oatmeal, bagels and even organic cage-free birds. Since the inception of GMO plants that are resistant to Roundup, fields of GMO corn or GMO soybeans are sprayed with Roundup. How does it make its way into eggs? Bioaccumulation. In the end, the pooling of pesticides/herbicides in eggs or coffee creamer is a lesson in the web of life. Though many folks believe we can extricate ourselves from the natural world, we will forever be members of the dynamic and interconnected ecology of the universe. The proverbial butterfly flapping its wings and creating a hurricane on the other side of the planet is analogous to bioaccumulation. Water pools down at the lowest point in a landscape. Unlike water, pesticides and herbicides pool up in a system as they accumulate up the food chain.

Again, part of the problem is tracing back to the source. This isn’t a problem with ALFN’s network. You have access to information, grower’s pages, and description of items throughout the website. Furthermore, you have direct access to the growers if you desire more information. ALFN’s market isn’t one of smoke and mirrors. Our goal is to provide transparency and access for the growing practices of all the items on the market.

We welcome Diamond5Farms to the market! They have listed an array of Grass fed / non-GMO / no antibiotics lamb! Check out their impressive website for more information.

Alfresco Pasta will be on break from NOW until the end of October. They wish you to know that you can find them at the Murfreesboro Saturday Market beginning in June and throughout the farmers market season. We wish them well and await their return.

Double Star Bar Farms has oyster mushrooms listed this week! Try those sautéed, in a cream sauce, in a soup… oh my! They will also bring asparagus and it will be table sales again due to its unpredictable growth patterns!

The Low Down on COLLARDS



The cholesterol-lowering ability of collard greens may be the greatest of all commonly eaten cruciferous vegetables. In a recent study, steamed collard greens outshined steamed kale, mustard greens, broccoli, Brussels sprouts, and cabbage in terms of its ability to bind bile acids in the digestive tract. When this bile acid binding takes place, it is easier for the bile acids to be excreted from the body. Since bile acids are made from cholesterol, the net impact of this bile acid binding is a lowering of the body’s cholesterol level. It’s worth noting that steamed collards show much greater bile acid binding ability than raw collards.

We get unique health benefits from collard greens in the form of cancer protection. The cancer-preventive properties of collard greens may be largely related to 4 specific glucosinolates found in this cruciferous vegetable: glucoraphanin, sinigrin, gluconasturtiian, and glucotropaeolin. Each of these glucosinolates can be converted into an isothiocyanate (ITC) that helps lower our cancer risk by supporting our detox and anti-inflammatory systems.

VICKIE’S COLLARD ROLLS

“This was heavenly and really did not take that long to prepare.”

 
Roughly 40 collard leaves, stemmed.
Blanch for 2 minutes then dunk in cold water then drain.
1 lb ground deer meat (other ground meats could be substituted)
¼ C olive oil
1 onion chopped fine
1 & ½ C cooked jasmine rice
2 or 3 minced garlic cloves
¼ each C fresh chopped dill and parsley
2 T ketchup
2 T lemon juice
Salt and pepper to taste
Chicken broth
 
Heat  the olive oil over medium-low heat in a large nonstick skillet and add the deer, onions, garlic and a pinch of salt. Cook, stirring, until the meat is done and the onion is tender. Scoop the meat mixture out of the pan reserving the drippings.  Add the rice, ketchup and chopped herbs and salt and pepper to taste. Combine well. 
 
Oil a wide, deep lidded sauté pan or saucepan with olive oil. To fill the leaves, place one on your work surface, vein side up and with the stem end facing you. The leaf may have a big space in the middle where you stemmed it; if it does, pull the two sides of the leaf in toward each other and overlap them slightly. Place about 1 level tablespoon of filling on the bottom center of each leaf. Fold the sides over, then roll up tightly, tucking in the sides as you go. Place in the pan, seam side down, fitting the stuffed leaves in snug layers.
 
Once the leaves are layered in the pan, pour the remaining drippings from the meat over the leaves.  Then drizzle with the lemon juice.  Add chicken broth – just enough to cover the leaves.  Simmer one hour until leaves are tender.
